Step 1: Wash the fruit with clean water. Halve grapes and cut the other fruit into cubes or thin slices, removing any cores or stones. Measure 3 cups of sliced fruit.
Step 2: Put all 3 cups prepared sliced fruit in a large bowl, add the ¼ cup fine granulated sugar and toss gently. Refrigerate for at least 5 minutes, tossing occasionally to help the sugar dissolve and release the fruit juices. For a stronger fruit flavor, refrigerate this fruit-and-sugar mixture overnight instead.
Step 3: Stir the ¼ cup brandy and ¼ cup fruity liqueur into the macerated fruit and all its juices. Transfer the mixture to a large pitcher. Pour in chilled white wine until the pitcher is about three-quarters full, then stir gently; keep any unused wine aside.
Step 4: For the usual infused version, cover and refrigerate the fruit and wine mixture for at least 2 hours, or overnight for more flavor. If serving immediately, skip this infusion wait and proceed to the serving step with the already chilled mixture.
Step 5: To serve six people, put ice cubes in each glass and spoon in some of the soaked fruit. Pour in the infused wine, leaving about 1 cm at the top if using sparkling water. Top up with sparkling water if desired and enjoy immediately. Keep unused sangria refrigerated with its fruit for up to 2 days.
