  1. Step 1: Peel the 4 garlic cloves. Blend the 1 1/2 cups olive or neutral oil, 1/2 cup red wine vinegar, 1/4 cup honey, 3–4 chipotles in adobo, 1 tbsp adobo sauce, garlic, 1 tsp oregano, 1/2 tsp cumin, 1 tsp salt, cracked black pepper (to taste), a squeeze of lime juice and a splash of water until well combined. Optionally remove chipotle seeds before blending.

Uses 1 1/2 cups olive or neutral oil · 1/2 cup red wine vinegar · 1/4 cup honey · 3–4 chipotle peppers in adobo · 1 tablespoon adobo sauce · 4 garlic cloves · 1 teaspoon oregano · 1/2 teaspoon cumin

  2. Step 2: Taste the blended vinaigrette from step 1. Blend in a little extra honey for sweetness, or extra chipotle or adobo sauce for heat, only if needed. These are additional taste adjustments, not a second addition of the initial measured honey or chipotles.

Uses Blended chipotle-honey vinaigrette · Extra honey, to adjust sweetness · Extra chipotle in adobo, to adjust heat · Extra adobo sauce, to adjust heat

  3. Step 3: Serve the adjusted vinaigrette from step 2 immediately. Promptly refrigerate unused dressing in a covered airtight container; stir or shake before using again.
