  1. Step 1: Mix the 250 g flour and ¼ teaspoon salt. Add the 125 ml dough water gradually, stirring until no loose flour remains. Combine and knead briefly into a smooth, fairly firm dough; add a little extra water only if needed for that texture. Cover and rest for 10–15 minutes, checking from 10 minutes.

  2. Step 2: Knead the rested dough from step 1 again for about 2 minutes, until very smooth and fairly firm.

  3. Step 3: Divide the smooth dough from step 2 into two equal pieces. Roll each into a rectangle about ½ cm thick.

  4. Step 4: Thoroughly coat both sides of each dough rectangle from step 3 with cooking oil. Place them on a tray, cover and rest for at least 1½ hours, until soft and stretchy. If preparing them for the next day, refrigerate the covered dough, then let it return to room temperature before pulling.

  11. Step 11: Once the first rectangle has been pulled into the boiling pot, cook for about 1 minute for thin noodles or 2 minutes for broad noodles. Check from 1 minute; broad noodles usually need the second minute. They should be cooked through, smooth and chewy. While waiting, cut the reserved second rectangle from step 4 to the same width. Lift and drain the first batch into a serving bowl.
