  1. Step 1: Cut the flesh from the mango (2 cups) pits, scoop it out and coarsely chop. Scrape any remaining flesh from the pits, then discard the pits and skins. Measure 2 cups diced mango for the jam.

Uses 2 cups diced mangoes (about 2 large)

  2. Step 2: In a pot, combine mango, sugar (1 cup), and lemon juice (1 tablespoon). Mash to a smooth or chunky consistency using an immersion blender or potato masher.

Uses 2 cups prepared diced mango · 1 cup sugar · 1 tablespoon lemon juice

  3. Step 3: Bring to a boil until sugar dissolves. Continue to cook at a rolling boil for about 3 to 5 minutes or until the mixture thickens.

  4. Step 4: To check for doneness, use the "parting the sea" technique by transferring a teaspoonful onto a small dish and refrigerate for about 1 minute. Run your finger in the middle of jam. If it remains open and does not flow back together, it is ready.

  5. Step 5: Transfer mango jam to jars while hot. Allow to cool before sealing completely and store in refrigerator.
