Step 1: Heat 1 tsp of the 2 tsp toasted sesame oil stock in a pan over medium heat. Add all 12 thin beef slices and cook through to at least 63°C / 145°F. Transfer the cooked beef to a plate, keeping it separate while you prepare the rice.
Step 2: Let the earlier cooked beef rest for at least 3 minutes while you prepare the fried rice in the following steps.
Step 3: Melt all 2 tbsp butter in the same pan over medium heat.
Step 4: Add all 4 minced garlic cloves, the diced 1 shallot and 2 tbsp gochujang to the earlier melted butter. Sauté for 1 minute.
Step 5: Stir all 1 cup chopped kimchi through the earlier butter, aromatics and gochujang. Cook for another 1 minute.
Step 6: Add all 450 g cold ready cooked rice, ¼ cup kimchi juice and the remaining 1 tsp sesame oil to the earlier cooked kimchi mixture. Break up the rice with a spatula and stir-fry for another 2 minutes, continuing as needed until the rice is steaming hot throughout and reaches 74°C / 165°F.
Step 7: After the beef has rested for at least 3 minutes, return all those earlier cooked beef slices to the earlier hot kimchi rice. Stir together until evenly mixed and hot.
