Step 1: In a large saucepan, combine the sugar (1/2 cup) and the water (8 cups) over medium high heat and stir until the sugar dissolves.
Step 2: Next, add in the chá mate and stir to combine. When the water begins to simmer — please don't actually let it boil because that could bring on bitterness from the tea leaves — turn off the heat and let it steep for at least 10 minutes.
Step 3: Strain and cool.
Step 4: Serve the cooled tea plain, cold and over ice if desired. For optional lime syrup, simmer ½ cup sugar with ½ cup water until dissolved; cool, then mix in 1 cup lime juice and 2 cups water. Add this syrup to the prepared tea to taste and serve with ice and optional lime garnish. For optional passion-fruit syrup instead, simmer its separate ½ cup sugar with ½ cup water until dissolved; cool, then mix in ½ cup passion-fruit pulp and 1 cup water. Add that syrup to the prepared tea to taste and serve over ice if desired. Reserve any unused syrup.
