Method6 steps · about 2 hr 10 min
Step 1: Whisk the 4 g agar agar powder into the 1 cup water in a small saucepan until evenly dispersed.
Step 2: Heat the same agar-water mixture over medium-high heat until it boils, then boil for another 1 minute while whisking so the agar dissolves and activates.
Step 3: Whisk in all 2 tbsp sugar. Reduce the heat to medium and whisk in all 1 cup coconut milk. Continue whisking for about 1 minute, until the mixture returns to a gentle boil, then remove it from the heat.
Step 4: Let the cooked coconut agar mixture cool off the heat for 3 minutes.
Step 5: Pour the same mixture into a heatproof container and refrigerate for at least 2 hours, until it is firmly set. During the final 15–30 minutes before serving, put four small serving bowls in the refrigerator to chill as well.
Step 6: Cut the firmly set coconut agar jelly into about ½-inch cubes. Divide all the jelly and the cleaned, quartered pint of strawberries (1 pint) between the four chilled bowls. Divide the optional ¼ cup almond milk between the bowls as a small serving splash, or omit it. Serve cold.
