Method7 steps · about 25 min
Step 1: Bring a large pot of cooking water to a boil and salt it well.
Step 2: Meanwhile blend only the arugula (45 g), walnuts (50 g), 65 ml olive oil, garlic (1) and Parmigiano Reggiano (50 g) in a food processor until smooth. Add extra olive oil only if needed. Taste and add a little optional lemon juice if too bitter or peppery. Transfer the pesto to a large mixing bowl.
Step 3: Heat a pan over medium heat, add the cubed pancetta (100 g) and fry until golden and crisp. Remove and set aside.
Step 4: Once the pesto and pancetta are ready, add the gnocchi (500 g) to the boiling salted water. Cook until they float and are cooked according to their package or maker’s guidance. Lift them into the pesto bowl, keeping the cooking water in the pot.
Step 5: Draw 60 ml (¼ cup) of the gnocchi cooking water from step 4 and stir it into the gnocchi and pesto until evenly coated. Add more of the same cooking water only if the sauce remains too thick.
Step 6: Divide the coated gnocchi among 4 bowls. Spoon the burrata (1) over the portions and top with all the reserved crisp pancetta.
Step 7: Serve the assembled gnocchi promptly while warm.
