Step 1: Add the water (4 cups) and salt (1 tsp) to a medium saucepan. Cover, bring to a rolling boil over high heat, then stir in the quick-cooking yellow grits (1 cup). Reduce the heat to low, replace the lid, and simmer for 5–7 minutes or until thickened. Check the grits package: a different brand may require a different time or method.
Step 2: Add the butter (2 Tbsp) and milk (1/2 cup) to the grits and stir until the butter has melted and the grits are smooth. Stir in the grated cheddar (4 oz), one handful at a time, until fully melted in and smooth. Leave the lid on the pot with the burner turned off to keep the grits warm.
Step 3: Cook four eggs using your favorite method (fried, scrambled, soft boiled, etc.). Slice the green onions (4).
Step 4: To build the bowls, place one cup of the cheddar grits in a bowl, top with one egg, 1/4 cup salsa, some freshly cracked pepper, and a sprinkle of sliced green onions.
