Method5 steps

  1. Step 1: Heat the oven to 180°C / Gas 4. Line a baking tray with greaseproof paper.

  2. Step 2: Finely grind all the cashew nuts (250 g) with the measured 100 g paste icing sugar in a food processor. Add both egg yolks (2) and all the orange blossom water (2 tbsp), and process or mix until a smooth, homogeneous cashew paste forms. Keep the additional coating icing sugar separate.

Uses 250 g cashew nuts, finely ground in step 2 · 100 g icing sugar for cashew paste · 2 egg yolks · 2 tbsp orange blossom water

  3. Step 3: Shape small portions of the prepared cashew paste into balls, using the entire batch. Roll them in the additional coating icing sugar and place them on the lined baking tray.

Uses All the prepared cashew paste · Additional icing sugar for rolling the shaped biscuits, as needed

  4. Step 4: Press one whole almond into the centre of each shaped biscuit. Use only as many almonds as there are biscuits and keep any remaining almonds for another use.

Uses All the shaped coated biscuits · One whole almond per biscuit from the available 100 g; retain unused almonds

  5. Step 5: Bake in the heated oven for about twenty minutes until lightly golden. Watch closely towards the end because these nut biscuits burn quickly. Let the baked biscuits cool enough to handle before serving.
