Step 1: Toss the cleaned, cut squid or calamari (270 g) with the rice wine (1 Tbsp) in a medium bowl and set aside.
Step 2: Mix the gochujang (1 Tbsp), soy sauce (1.5 Tbsp), gochugaru (2 Tbsp), optional Korean chili oil (2.5 Tbsp), sugar (1 Tbsp), minced garlic (1 tsp) and ground black pepper together in a bowl. Set this seasoning sauce aside.
Step 3: Heat a skillet over medium-high heat. Add 2–3 Tbsp cooking oil, then the 60 g sliced onion and 20 g sliced green onion. Stir for 1–2 minutes until fragrant.
Step 4: Add the sliced carrot (50 g) and cabbage (80 g) to the fragrant onions. Stir over medium-high heat for about 2 minutes until the cabbage is slightly wilted.
Step 5: Add the rice-wine-seasoned squid and all the prepared seasoning sauce to the vegetables. Stir evenly, lower the heat to medium and cover. Cook for about 5 minutes, stirring occasionally, until the squid is cooked through. Stop once cooked to keep it tender.
Step 6: Remove the cooked squid and vegetables from the heat. Stir in the separate 1 tsp sesame oil.
Step 7: Divide the 2 cups already cooked rice between two bowls and top with the cooked squid, vegetables and sauce. If desired, add the optional sesame seeds and sliced green-onion garnish, and a prepared fried egg. Serve immediately.
