Method5 steps · about 10 min

  1. Step 1: Put a saucepan of pasta cooking water over high heat and bring to a boil. Snip the ready-to-eat sliced cured chorizo (80 g) into strips with scissors. Wash and chop all the flat-leaf parsley (20 g). Drain both cooked jarred red peppers, check for stray seeds and chop them. Keep the three prepared ingredients separate.

Uses 80 g ready-to-eat sliced cured chorizo · 20 g fresh flat-leaf parsley · 2 cooked red peppers from a jar in brine or oil, drained · Water for boiling fresh spaghetti, as needed

  2. Step 2: When the cooking water boils briskly, add the separate pasta-water salt and all three hundred grams fresh spaghetti. Stir, return to the boil and cook for about three minutes until tender, checking the fresh pasta package if needed.

Boil fresh spaghetti until tender · 3 minUses The saucepan of boiling water · 300 g fresh spaghetti · Salt for the fresh-spaghetti cooking water, as needed

  3. Step 3: Heat all the olive oil (2 tbsp) in a large frying pan. Add all the prepared cured chorizo strips, all the chopped cooked jarred red peppers and black pepper to taste. Cook for about one minute until heated through and the chorizo paprika colours the pan juices red.

Heat cured chorizo and cooked jarred peppers · 1 minUses All prepared chorizo strips · All prepared cooked pepper pieces · 2 tbsp olive oil · Ground black pepper for the chorizo and pepper pan, to taste

  4. Step 4: Scoop half a mugful of the hot starchy spaghetti cooking water into a heatproof mug and keep it aside. Drain the cooked spaghetti and put all of it into the hot chorizo-pepper pan.

Uses All cooked spaghetti with some cooking water reserved · The complete hot chorizo-pepper pan

  5. Step 5: Add all the prepared chopped parsley and all fifty grams finely grated Parmesan to the combined pasta pan. Toss well, adding splashes from the retained half mugful of hot cooking water only as needed to moisten. Serve as four portions, handing round the separate optional extra grated Parmesan at the table.

Uses The complete combined pasta pan · A splash from the reserved half mugful, only as needed · All prepared parsley · 50 g Parmesan cheese, finely grated · Extra grated Parmesan for the table, as desired
