Method7 steps
Step 1: Crush or finely chop the garlic (2 cloves) and grate the ginger (3 tsp). Place them in a small bowl with the soy sauce, sesame oil (2 tbsp) and brown sugar (1 tbsp).
Step 2: Use thin cross-cut flanken ribs (600 g) just under 1 cm thick. Pat dry and place in a large dish. Coat every surface with the prepared soy, sesame, garlic and ginger marinade.
Step 3: Cover and refrigerate the prepared coated ribs in their marinade for at least 30 minutes.
Step 4: Preheat the barbecue, griddle or grill to a medium high heat.
Step 5: Put the prepared marinated thin ribs in one layer on the heated barbecue, griddle or grill. Sear the first side for 1 minute without disturbing, cooking in batches if needed.
Step 6: Turn the first-side seared ribs and cook for another 1 minute, then continue as needed until the thickest meat reaches 63°C (145°F), keeping the thermometer clear of bone.
Step 7: Rest the cooked ribs for at least 3 minutes before serving.
