Method7 steps
Step 1: Measure 1 teaspoon lemon juice. If grinding whole almond kernels yourself, grind them finely before continuing.
Step 2: Line a baking tray with baking paper.
Step 3: Beat the egg whites (5) in a mixing bowl with a hand mixer until very stiff, gradually add the icing sugar (3 ⅓ cups), stir it in and add the lemon juice (1 tsp). Beat until the mixture is glossy and creamy. For the icing, take 4 tablespoons of the mixture and put it aside.
Step 4: Now stir the ground almonds (3 ½ cups) and the cinnamon (1 tbsp) into the egg white and sugar cream and knead everything into a dough. Cover the dough and refrigerate it overnight, or at least for 3 hours.
Step 5: After chilling, preheat the oven to 140°C/275°F top/bottom heat, or 120°C fan. Roll the dough 1 cm thick on a floured work surface and cut stars with a star cutter. Place on the prepared tray, spaced apart, and brush each with the reserved egg-white/sugar icing.
Step 6: Leave the cinnamon stars to dry/bake for 30 to 40 minutes.
Step 7: They should not brown and should still be a little soft. Then take them out and let them cool.
