Step 1: From the cleaned water-spinach (1 bunch) bunch, keep the leaves and a few tender stalks; discard tough ends and chop the selected greens. Check the squid-ball (10) label for thawing or cooking instructions and halve all 10 balls.
Step 2: Heat the 3 tbsp cooking oil in a pan over medium heat.
Step 3: Add the minced onion (1) and crushed minced garlic (3 cloves) to the hot oil. Sauté until the onion softens.
Step 4: Add all 10 halved squid balls to the softened aromatics and stir-fry for 3 minutes. If the product requires longer cooking, continue as its label directs so the balls are fully cooked before serving.
Step 5: Pour in the 3 tbsp oyster sauce and stir to coat the squid balls.
Step 6: Stir the 1 tsp cornstarch into the 1/2 cup chicken broth until smoothly blended. Pour the mixture into the pan and stir over medium heat until the sauce bubbles and thickens.
Step 7: Add the chopped water-spinach leaves and selected tender stalks to the thickened sauce. Cook for 2–3 minutes, stirring, until wilted and tender.
Step 8: Taste and season with salt and ground black pepper as needed.
Step 9: Transfer the finished dish to a serving plate and serve hot, sharing it among three people.
