Step 2: Slice the sausages, Spam and tofu. Trim and separate the enoki mushrooms and follow any preparation directions on the rice-cake package. Arrange all 200 g sausages, 200 g Spam, 200 g tofu, 1 cup kimchi, 1 cup rice cakes and 200 g enoki mushrooms in a wide pan. Add the entire seasoning mixture from the previous step.
Step 3: Pour all 4 cups chicken stock into the arranged pan. Bring the whole seasoned pot to a boil, then maintain a simmer to cook the sausages and mushrooms thoroughly and soften the rice cakes. For raw beef or pork sausage, check the centre reaches 71°C/160°F; raw poultry sausage needs 74°C/165°F. Follow the product directions for fully cooked sausage. A bubbling broth or this photograph alone does not establish that raw sausage is cooked.
Step 4: Keep the cooked hotpot simmering. Add the noodles from the one ramen package, both cheese slices and both eggs. Cook the noodles for their package-directed time, until tender, the rice cakes are soft, the mushrooms are cooked and the cheese is melted. Cook both egg whites and yolks until firm; check any raw sausage has reached its required temperature before serving. The author supplies no separate noodle or egg timer.
Step 5: Scatter the whole handful of sliced scallions over the fully cooked hotpot. Share among 3 servings and serve immediately, with hot steamed rice alongside if desired; its amount is unspecified.
