Method6 steps · about 40 min
Step 1: Rinse the2cups dry basmati rice several times in cold water until the water runs clear. Drain thoroughly and discard all rinsing water.
Step 2: Heat2tablespoons olive oil in a medium saucepan over medium-high heat. Stir in the onion (1 medium) and cook until soft and translucent. Add the garlic (1) and grated ginger (1 tsp) and stir about30seconds until fragrant.
Step 3: Stir the ground turmeric (1 tsp) and rinsed drained rice from step1 into the aromatic base from step2 until evenly coated.
Step 4: Add the2¼cups vegetable broth, or the same volume water instead, and½teaspoon kosher salt to the turmeric-coated rice. Bring to a boil.
Step 5: As soon as the pot boils, gently stir in the optional1½cups total chopped herbs: cilantro, dill, parsley or one combination. Reduce the heat to low, cover tightly and simmer12–15minutes until the rice is tender and the liquid absorbed. If the pot dries while grains are still firm, add only a small extra hot-water splash and continue covered until tender.
Step 6: Remove the tender rice from the heat and leave covered for10minutes to steam. Uncover, fluff gently with a fork and serve six side portions.
