Step 1: Preheat the oven to 180°C / 350°F.
Step 2: Heat ½ tbsp of the olive oil in a frying pan over high heat. Add the diced bacon and sauté until crisp and cooked through. Lift it out and drain on absorbent paper.
Step 3: Peel and grate the starchy potatoes (1 kg) into a colander. Rinse briefly under cold running water to remove loose surface starch and keep them from browning.
Step 4: Squeeze the grated potatoes firmly, a handful at a time, to remove excess water. Put the squeezed potatoes in a mixing bowl.
Step 5: Reserve some drained bacon for garnish. Add the rest to the squeezed potatoes with the remaining 2 tbsp olive oil, grated cheese, ¾ tsp salt and black pepper. Mix thoroughly.
Step 6: Spray all twelve holes of a standard muffin tin with oil, including the sides.
Step 7: Pack ⅓ cup of the potato mixture into each of the twelve greased holes. Pat the tops down lightly with the back of a spoon. Set any excess mixture aside in the refrigerator.
Step 8: Bake for about 30 minutes, until the tops are dark golden, the edges are crisp and the potatoes are cooked through.
Step 9: Let the hash browns stand in the tin for a few minutes so they firm up enough to lift out. Carefully loosen the edges and turn them out.
Step 10: Garnish with the reserved cooked bacon and optional chopped parsley (1 tbsp). Serve immediately while the crusts are crisp.
