Step 1: To make the fried rice sauce, mix soy sauce (2 tbsp), oyster sauce (1 tbsp), sesame oil (2 tsp) and white pepper (1/4 tsp) (or black pepper) in a small bowl and set aside.
Step 2: Heat a tablespoon of oil in a wok or a large skillet over med-high heat. Add the beaten eggs (3) and stir until they are half cooked (still slightly wet). Transfer the eggs to a plate and set aside.
Step 3: Heat another tablespoon of oil, add Spam pieces and fry until they are crisp and slightly browned, about 2-3 minutes. Add garlic (2 cloves), green onion (2) and stir fry for 1 minute.
Step 4: Add peas and corn and continue to fry for 30 seconds. Add rice and toss with spam and vegetables until rice grains are separated and well incorporated.
Step 5: Pour the prepared sauce over the fried rice and toss well. Add the reserved scrambled eggs and continue tossing until the rice is hot and the eggs are fully set. Serve hot.
