  1. Step 1: Stir any separated oil back into the sesame-paste jar before measuring. In a small bowl, combine all 1 tbsp Chinese roasted sesame paste, 1 tbsp soy sauce, 1 tbsp unseasoned rice vinegar, 1 tbsp sesame oil, the minced garlic (2) and 1 tbsp of the chili oil or chili crisp. Reserve the other 1 tbsp chili oil for finishing.

Uses 1 tbsp Chinese roasted sesame paste · 1 tbsp soy sauce · 1 tbsp unseasoned rice vinegar · 1 tbsp sesame oil · 1 tbsp chili oil for the sauce, half of the 2 tbsp stock · 2 garlic cloves, minced

  2. Step 2: Stir all 2 tsp hot water into the same sauce to make it loose enough to drizzle like gravy. If it remains too thick, add the optional additional hot water 1 tsp at a time until it reaches that consistency. Keep the sauce aside while cooking the wontons.

Uses One mixed sesame sauce batch containing 1 tbsp chili oil · 2 tsp hot water for the sauce · Additional hot water, optional, 1 tsp at a time if needed to thin the sauce

  3. Step 3: Bring a pot of water to a boil and add the 20–24 prepared pork wontons. The author gives about 3 minutes for fresh wontons or 5 minutes for frozen ones. Follow their actual cooking directions and continue until the wrappers are tender and the filling is fully cooked, reaching 165°F (74°C) in the centre. Drain and slide all the hot wontons onto a shallow serving plate.

Uses 20–24 prepared uncooked pork wontons, fresh or frozen · Water as needed to boil the prepared pork wontons.

  4. Step 4: Drizzle the prepared sesame sauce evenly over the cooked wontons for the two servings. Drizzle the remaining 1 tbsp chili oil or chili crisp over the top, then scatter all the chopped green onion (1) and 1 tsp sesame seeds over the dish.

Uses All fully cooked hot pork wontons on the serving plate · Prepared spoonable sesame sauce for two servings · Remaining 1 tbsp chili oil for topping, half of the original 2 tbsp stock · 1 green onion stalk, chopped · 1 tsp sesame seeds

  5. Step 5: Divide the finished plate between two people, about 10–12 cooked wontons each, and eat promptly while hot. For advance preparation, keep uncooked wontons frozen and the separately prepared sesame sauce sealed in the refrigerator for up to the author’s two days; cook and assemble just before serving.
