Method6 steps · about 40 min
Step 1: Wash and peel the carrots. Slice the 500 g soup carrots and peel the two garnish carrots into long ribbons, keeping them separate. Peel and chop the onion (1) before heating the pan.
Step 2: Heat the tablespoon of olive oil (1 tbsp) in a saucepan. Add the chopped onion and sauté for about 5 minutes, stirring, until golden.
Step 3: Add the sliced soup carrots, dried red lentils (250 g), turmeric (1 tsp) and stock cube. Pour in 800–1,000 ml water and season with salt (to taste). Bring to a gentle simmer, partially cover and simmer for about 20 minutes, until the carrots are soft and the lentils are cooked.
Step 4: While the soup simmers, bring a separate pan of water to the boil. Briefly blanch the carrot ribbons until cooked and pliable enough to roll. Lift them out and drain, discarding the blanching water.
Step 5: Turn off the heat and blend the cooked soup with an immersion blender, keeping its head submerged to avoid splashes. If the soup has too much liquid, ladle some into a bowl and reserve it before blending; add it back as needed. If it is too thick, blend in a little extra water until smooth. Taste and adjust salt and pepper.
Step 6: Share the smooth soup between four bowls. Roll the blanched carrot ribbons and arrange them on top, then sprinkle with sesame seeds and serve.
