Step 4: Repeat shaping evenly sized balls from the remaining mixture.
Step 5: Heat enough deep-frying oil in a suitable deep pan to 170°C (338°F), checking with a frying thermometer. Leave ample space for food and bubbling, keeping a saucepan no more than one-third full or following the fryer fill line, and fry the balls in small batches.
Step 6: Fry until golden outside and the largest meatballs reach at least 71°C (160°F) in the centre. Lift them from the oil and drain; crust colour alone does not establish that ground meat is cooked.
Step 7: In a separate small pan mix the sauce quantities: two tablespoons each soy sauce, sake (2 tbsp), sugar (2 tbsp), mirin (2 tbsp) and water (2 tbsp). Heat and reduce until slightly thickened.
Step 9: Turn the heat off and serve into a shallow bowl.
Step 10: Drain the finely sliced scallion garnish thoroughly. Sprinkle the teaspoon white sesame seeds (1 tsp) over the glazed meatballs and top with the drained scallion.
