Aloo Chokha (Easy Authentic Recipe)
From the zcook collection
A super simple aloo chokha recipe, just the way it was made in my home in eastern Uttar Pradesh. Boiled potatoes are mashed and flavored with chilies, mustard oil and achar (pickle) masala for that authentic flavor!

Step 1: Wash the 500 grams potatoes, cut in half and cover with water in a pot. Boil over medium-high heat for about twenty minutes until fully tender. If using a pressure cooker or microwave instead, follow its instructions to reach the same tender endpoint.
Step 2: Drain the potatoes, cool slightly, peel, then roughly mash in a large bowl.
Step 3: Mix the mashed potatoes with the finely chopped small red onion (1 small), half teaspoon salt, one to two finely chopped green chilies, one-and-a-quarter teaspoons mustard oil (1 1/4 teaspoons), one-and-a-half teaspoons ready achar pickle masala (1 1/2 teaspoons) and two to three tablespoons chopped cilantro. Mash and mix with a fork, then taste and adjust the salt and spice if needed.
