Method9 steps
Step 1: Plan a varied hot-pot meal for approximately6 diners, choosing ingredients to suit appetite rather than buying every option listed. The source card suggests1–2 leafy greens,1–2 other vegetables,1–2 mushrooms,2–3 meats or seafood if desired,1–2 starches and2–3 tofu or bean-curd items, plus preferred dipping-sauce ingredients. Choose your broth or packet base and check the selected products’ ingredients and cooking directions.
Step 2: Wash the selected leafy greens thoroughly; leave small baby bok choy whole and cut larger leaves into2.5–5 cm pieces. Peel chosen root vegetables as appropriate; slice lotus root, potato, sweet potato or squash about6 mm thick, cut daikon or winter melon into2.5 cm pieces, tomatoes into wedges and corn into2.5 cm rounds. Clean selected mushrooms: trim enoki bases and split bundles, trim/slice king mushrooms, remove shiitake woody stems and slice, clean oyster mushrooms, and separate shimeji. Prepare dried wood ears in the next action. Drain and arrange vegetables and fresh mushrooms separately.
Step 3: If selected, rehydrate dried wood ears according to their package, rinse away grit, drain and remove woody ends. Soak dried bean-curd sticks until fully pliable, following package soaking directions and refrigerating any long soak; the source’s3–4-hour guide varies with the product. Drain and cut the sticks into5 cm pieces. If using mung-bean vermicelli, soak in warm water for about10 minutes or as its packet directs, then drain. Discard all preparation water and keep these chosen items separate until cooking.
Step 4: Keep the chosen raw meat and seafood cold while preparing the table. Thinly slice chosen beef across the grain, pork shoulder/loin or belly, lamb shoulder/leg, boneless chicken and fish; prepare selected shrimp, scallops or squid/cuttlefish in manageable pieces. Keep raw proteins separate from ready-to-eat foods and use separate handling utensils. For chosen beef/pork/fish/squid/mixed seafood balls, fish cakes or fish tofu, check whether the package says raw or precooked and keep its cooking or reheating instructions with the product.
Step 5: If selected, par-cook rice vermicelli according to its package, rinse in cold water and drain. Prepare chosen thin fresh white or spinach noodles, shirataki, thin oval rice cakes and small frozen dumplings according to their package; keep frozen dumplings cold until cooking. Ready the selected tofu items: halve soy puffs if desired, cut frozen or firm tofu into2.5 cm pieces, and portion bean-curd rolls, fresh tofu sheets/skin or pressed tofu for the pot. Keep the separately rehydrated mung-bean vermicelli and bean-curd sticks ready too.
Step 6: Prepare the chosen soup base with the water specified on its packet, or use ready stock. Bring the actual amount for your pot to a boil. Set a wide, shallow pot securely on a suitable portable electric burner at the center of the table and keep the broth boiling as ingredients are added; replenish it only as needed.
Step 7: Place separate plates of the chosen prepared vegetables/mushrooms, rehydrated items, starches/tofu and cold proteins around the hot pot. Bring out the selected dipping-sauce ingredients and individual bowls. Keep raw-protein utensils separate from serving utensils, and bring out further cold raw food in small portions as needed.
Step 8: Each diner mixes a personal dipping sauce in a small bowl, choosing a base such as Chinese sesame paste/sauce, peanut butter/sauce, soy sauce or sha-cha sauce. Add the preferred sesame or Sichuan-peppercorn oil, chili or chili-garlic sauce, black or rice vinegar, white pepper, toasted sesame seeds, minced garlic, scallions, cilantro or ready fried shallots/garlic to taste. These are alternatives and optional additions; there is no requirement to combine or consume all of them.
Step 9: Cook small batches of the chosen prepared ingredients in the boiling broth, adding harder vegetables and shiitake early and keeping the broth boiling without overcrowding. Boil selected enoki thoroughly for at least2 minutes after boiling resumes; cook other vegetables/mushrooms until tender. Cook chosen starches, dumplings and tofu according to their package and filling instructions. Cook raw proteins completely: chicken to74°C, raw minced-meat balls to71°C; whole-cut beef, pork or lamb to63°C with3 minutes’ rest; fish to63°C or opaque/easily flaking, and shrimp/scallops until opaque throughout. Follow the packet for squid and processed seafood and for reheating ready products. After adding raw meat or seafood, allow the broth to return to a boil and continue for at least30–60 seconds, while also meeting each food’s full cooking endpoint; that broth reminder alone does not establish doneness. Retrieve only fully cooked food with clean serving utensils and dip into each person’s prepared sauce. Add replenishing water only as needed and bring the broth back to a boil before more cooking.
