Method6 steps
Step 1: Preheat to 350°F / 175°C. Thoroughly coat the inside of a 10-cup-capacity bundt pan with nonstick baking spray and set aside.
Step 2: Whisk the flour (3 cups), 1 tsp fine salt, baking powder (1 teaspoon), baking soda (½ teaspoon) and cardamom (1 tablespoon) together; the salt is added only once.
Step 3: Combine buttermilk (¾ cup) and lemon juice in a small bowl. Set aside.
Step 4: Combine butter (18 tbsp) and granulated sugar (2 cups) in the work bowl of a stand mixer fitted with the paddle attachment. Mix on medium speed until the mixture is light and fluffy, about 3-4 minutes. Add eggs (3) and egg yolk (1) one at a time, allowing each one to fully incorporate into the batter before adding the next.
Step 5: On low speed, mix one-third of the prepared flour mixture into the creamed butter-egg base, then half the prepared buttermilk mixture; repeat and finish with the last third of flour. Mix only until combined. Transfer to the prepared bundt pan, smooth and tap to release air bubbles. Bake on a baking sheet for 50–60 minutes until a centre skewer comes out clean.
Step 6: Cool the cake in the pan for 10 minutes. Lay a wire cooling rack over the top of the pan and invert the cake onto the rack. Remove the pan, leaving the cake behind. Cool the cake to room temperature and dust with powdered sugar before serving.
