Step 1: Heat the toaster oven or regular oven to 400°F (about 200°C). Use fully cooked ready-to-eat hanpen and ready-to-eat mentaiko, thawed in the refrigerator if frozen. Cut the one hanpen piece into bite-size cubes; the author cuts 36 cubes. Put all the cubes in a medium bowl.
Step 2: Slit the membrane of the one mentaiko lobe and scrape all its roe into the bowl of prepared hanpen cubes, or gently squeeze the roe out with chopsticks. Discard the membrane and keep the mixture chilled until baking.
Step 3: Add the one tablespoon Kewpie mayonnaise to the hanpen-and-roe bowl and fold gently until the cubes are evenly coated.
Step 4: Divide the one coated batch evenly among six oven-safe cupcake liners. Use supported paper liners in a muffin tin or self-supporting oven-safe silicone liners, arranged on a baking tray. Alternatively, spread the entire batch in one layer on a small oven-safe tray; choose only one arrangement.
Step 5: Bake the selected arrangement in the preheated 400°F oven for the source’s 5-minute guide, until heated through and lightly golden. Follow any additional heating instructions on the selected products; this short browning bake is for purchased ready-to-eat ingredients.
Step 6: Serve the six baked cups as three side portions, two cups per person, or divide the selected whole-tray batch into three portions. Add actual optional shredded nori and serve with actual optional ready-cooked rice.
Step 7: Refrigerate actual remaining baked portions within 2 hours in a sealed container and use within the source’s 1–2 days, or sooner if the selected products require it. Reheat in a 350°F toaster oven for the source’s 2-minute guide, continuing until the portion reaches 165°F (74°C) throughout.
