  1. Step 1: Dice the 100 g bacon. Peel and finely mince the small onion and 2 garlic cloves. Peel, core and dice the apple (1).

Uses 100 grams bacon · 1 yellow onion (small) · 2 garlic cloves · 1 apple (any kind of apple)

  2. Step 2: Melt the 30 g butter in a large pot or deep skillet over medium-high heat. Cook all the prepared bacon until crisp. Remove half the cooked bacon to drain on a paper towel and reserve for topping; leave the other half and rendered fat in the pan.

Uses diced raw bacon · 30 grams butter

  3. Step 3: Add the prepared onion, garlic and apple to the pan and sauté for 1–2 minutes. Stir in the 1 tbsp flour and 500 g drained ready sauerkraut.

Uses remaining cooked bacon and rendered cooking fat · minced onion and garlic and diced apple · 1 Tablespoon flour · 500 grams sauerkraut (drained)

  4. Step 4: Add the 500 ml chosen broth, 2 whole bay leaves and 4 juniper berries. Reduce to low heat, cover and gently simmer for 30–60 minutes until the sauerkraut is tender and flavours blend. Stir occasionally and add a little extra of the same chosen broth only if needed to prevent scorching.
