Step 1: Put all the dry bulgur wheat (25 g) in a saucepan, cover with water and boil for ten minutes until cooked. Drain very well through a sieve, pressing out excess water, then let the actual cooked drained bulgur cool enough to handle while making the tzatziki.
Step 2: Wash the five-centimetre cucumber piece (1), remove its seeds and coarsely grate the flesh. Squeeze the grated cucumber and discard the juice. Wash and chop fresh mint (2 tbsp), measuring two tablespoons for this sauce. Mix all the actual squeezed cucumber and measured chopped mint into all the thick Greek yogurt (200 g) with a little salt to make the tzatziki; cover and refrigerate until serving.
Step 3: Peel and finely crush the optional garlic clove if using. Work all the actual cooled drained bulgur into all the extra-lean raw lamb mince (500 g) with ground cumin (1 tsp), ground coriander (1 tsp), smoked paprika (1 tsp), the optional prepared garlic and salt and black pepper to taste. Shape the whole mixture into four patties and brush them with a little olive oil. Fry in a hot frying pan for about five minutes on each side, continuing as needed until their centres reach at least 71°C / 160°F. Transfer fully cooked patties to a clean plate.
Step 4: Wash and slice the serving tomato; peel and slice the serving red onion, and wash the separate handful mint garnish leaves. Split the four burger buns and toast them if you like. Put one actual fully cooked patty in each bun with the actual prepared tzatziki, sliced tomato, red onion and prepared mint leaves. Serve four burgers.
