Step 1: Soak the 1 cup dried chickpeas in enough water for at least 8 hours, then drain. Pressure cook with the 2 tea bags, 1-inch cinnamon piece, pressure-cooking bay leaf (1), 3 cardamom pods, 4 whole cloves, baking soda (¼ tsp), ½ tsp pressure-cooking salt and 3 cups water for about 5 whistles according to your cooker instructions. Let pressure settle fully, remove the tea bags and check the chickpeas are completely tender.
Step 2: Dry roast the spice-powder cumin, coriander seeds (1 tsp), shah jeera (0.25 tsp), pepper (¼ tsp), fennel, dried fenugreek, 3 whole cloves, 2 cardamom pods and 3 dried chillies over low heat until aromatic. Cool completely and grind finely, then mix in the turmeric (¼ tsp), amchur (0.25 tsp), pomegranate powder (¼ tsp) and hing.
Step 3: Heat 3 tsp oil in a large kadai with the curry bay leaf (1). Add the chopped onion (1) and begin sauteing.
Step 4: Add the ginger-garlic paste (1 tsp) and the curry slit chilli (1) and saute until the onion is golden brown.
Step 5: Add the homemade chana masala powder and saute gently until aromatic.
Step 6: further add 2 tomato and saute well.
Step 7: cook until the tomatoes turn mushy and oil is separated.
Step 8: Add the cooked chickpeas with their cooking liquid and the separate ½ tsp curry salt. Adjust consistency with a little water if needed.
Step 9: furthermore, cover and simmer for 15 minutes.
Step 10: After simmering, lightly mash a few chickpeas. Heat the 1 tbsp ghee in a small pan with the final slit chilli (1), julienned ginger (1 piece) and ¼ tsp Kashmiri chilli powder. Turn off the heat and saute briefly without burning, then pour over the curry. Stir in the fresh coriander (2 tbsp).
Step 11: finally, enjoy pindi chole with roti or bhatura.
