Step 1: Cut the tofu (1) block, about 14 oz (400 g), into roughly 1-inch cubes. Thinly slice all 3 green onions and keep separately. In a bowl, whisk 2 tablespoons miso, 2 tablespoons soy sauce, 2 tablespoons sake, 1 tablespoon sugar, 1 tablespoon potato starch and 1 cup cool water until the miso is dissolved and the starch is dispersed.
Step 2: Heat 1 tablespoon oil in a wok over medium heat. Stir in 1 teaspoon each minced garlic and ginger (1 tsp) and the dried red pepper. Add the 1/2 lb ground pork, break it into small pieces, and cook until browned and fully cooked to at least 71°C (160°F). Stir the prepared seasoning mixture again to lift any settled starch, then add it to the pork and bring to a boil, stirring until it thickens. Add the prepared tofu cubes and stir gently until hot throughout. Stir in the sliced green onions and a little sesame oil, then serve.
