Method8 steps · about 1 hr 5 min
Step 2: Clean the shrimp (8 small) and squid (1 small). Cut the squid into bite size pieces.
Step 3: Thinly slice the onion (1/4 medium) and shiitake mushrooms (2–3), cut the carrot (1/3 small) into matchsticks and slice the scallion (1) diagonally. Trim the optional enoki mushrooms (2 oz). In a small bowl, mix the 2 tablespoons soy sauce, 1 1/2 tablespoons sugar, 2 teaspoons minced garlic and the separately listed 1 tablespoon sesame oil for the sauce.
Step 4: Add the vegetable oil, sesame oil (1 tablespoon), and the gochugaru (1/2–1 tbsp) to a pan, and heat until hot over medium low heat, stirring. Remove from the heat as soon as the oil starts to turn red and the chili pepper flakes become a bit pasty. Do not burn the gochugaru.
Step 5: Turn the heat to medium. Add the soaked and drained noodles to the chili-oil pan with 1 1/2 tablespoons of the prepared sauce, reserving the rest of the sauce. Stir-fry for 3–4 minutes until the noodles are soft.
Step 6: Transfer the cooked noodles to a plate, leaving the pan for the vegetables. Stir-fry the prepared onion in the same pan for about 1 minute, then add the carrot and shiitake mushrooms and cook until wilted. Add the optional 1 tablespoon water only if they look dry. Lightly season with salt (to taste) and black pepper (to taste).
Step 7: Add the prepared squid and shrimp and all the remaining prepared sauce. Stir-fry until the seafood is opaque and cooked through. Add the prepared scallion and optional enoki mushrooms and cook until the scallion is slightly wilted.
Step 8: Return the cooked noodles from step 5 to the pan and toss with the seafood and vegetables. If needed, add a little of the separately listed optional extra sugar and/or soy sauce (to taste) to taste.
