  1. Step 1: In a bowl, dissolve the corn starch (2 teaspoons) in 50 ml (1/4 cup) milk.

Uses 2 teaspoons corn starch · 50 ml milk for starch slurry

  2. Step 2: Whisk the egg yolks (4) and granulated sugar with the starch slurry and remaining 250 ml milk in a saucepan. Add the lemon peel and cinnamon stick (1). Cook over low heat, stirring constantly, until thick. Remove the cinnamon stick and lemon peel, then let the custard cool completely.

Uses 4 egg yolks · 100 grams (1/2 cup) granulated sugar · remaining 250 ml milk · peel of one lemon · 1 cinnamon stick · 2 tsp cornstarch dissolved in 50 ml milk

  3. Step 3: Wash and peel the apples. Cut the apples into pieces and drizzle with a little lemon juice. Cut also into pieces the unpeeled plums (4) and mix with the apple pieces.

Uses 4 small red apples · juice of ½ lemon · 4 plums

  4. Step 4: Extend the puff pastry on a table and give it a rectangular shape. Place the fruit over the dough. Cover the fruit with the cream and roll the dough over the mixture (connect the edges of the dough with the help of the fingers).

Uses 500 grams (17 1/2 ounces) puff pastry · cooked egg-yolk custard cooled completely, cinnamon stick and lemon peel removed · prepared apples/plums mixed with lemon juice

  5. Step 5: Preheat the oven to 180ºC (350ºF).

  6. Step 6: Place on a baking tray and brush the top with beaten egg (1). Bake for about 30 minutes. Remove from oven, sprinkle with cinnamon powder and powdered sugar and cut the puff into slices with a sharp knife.
