Method8 steps · about 25 min

  1. Step 1: Starting at the top of each hot dog, wrap one slice of bacon around it in overlapping turns so the bacon edge stays closed as it cooks.

Uses 4 large all-beef hot dogs · 4 slices thin bacon

  2. Step 2: Tuck the bacon end under itself to secure it around each hot dog. Use a toothpick only if needed, and remove every toothpick before serving.

Uses Four hot dogs wrapped in bacon

  3. Step 3: Cook the secured bacon-wrapped hot dogs with the thinly sliced onion (½ large) in a large skillet, turning the dogs until the bacon is crisp on all sides and the onion is cooked.

Uses Four bacon-wrapped hot dogs with their ends tucked in · ½ large onion, thinly sliced

  4. Step 4: Just before assembling, loosely wrap each bun in paper towels or place the buns in a large zip-top bag. Microwave for 7–10 seconds, just until soft and warm; the buns should be steamed, not grilled.

Uses 4 large soft hot dog buns

  5. Step 5: Place one cooked bacon-wrapped hot dog in each warm steamed bun.

Uses Four buns warmed in the microwave · Hot dogs wrapped in crisped bacon

  6. Step 6: Top each hot dog with about 1 tablespoon of cooked onion, or use chopped raw onion instead.

Uses Cooked onion from the skillet; use about 1 tablespoon per hot dog, with the fraction of the whole onion supply unknown · Chopped raw onion as an alternative topping; amount unspecified

  7. Step 7: Add about 2 tablespoons of chopped tomato to each hot dog.

  8. Step 8: Remove any toothpicks before serving. Spread mayonnaise over the tomatoes and press lightly to hold them in place. Add mustard, ketchup and hot sauce to taste. Serve with Chiles Toreados; optional avocado and cooked whole pinto beans may also be added.
