Step 1: Marinade the minced beef or pork (1 cup) with pinch of salt. Soak Chinese vermicelli in warm water until soft around 10 minutes Move out and drain.
Step 2: Heat up oil (1 tablespoon) in wok and fry the ground pork until aromatic and crispy.
Step 3: Add doubanjiang (1 tablespoon), minced garlic (2 cloves), optional douchi, minced ginger (1 teaspoon) and the chopped scallion whites (1 teaspoon) to the browned meat. Stir-fry over medium heat until the oil turns red and the aromatics are fragrant.
Step 4: Add soaked vermicelli, and add around 1 cup of water. Heat until it thickened once again. Add light soy sauce (1 tablespoon), dark doy sauce, and sugar (1 teaspoon). Give a big stir-fry to mix everything well. (There is no need to cook off all the liquid as the vermicelli continues to adsorb liquid after transferring out).
Step 5: Sprinkle chopped green onions and serve hot.
