Method3 steps

  1. Step 1: Bring all 8 cups of water to a boil in a 6- or 8-quart saucepan. Add all the dried hibiscus flowers, stir and simmer over medium heat for 10–12 minutes, checking from 10 minutes, until the liquid is deeply colored and infused. Turn off the heat.

Check the hibiscus infusion · 10 minUses 8 cups water · 2 cups dried food-grade hibiscus or jamaica flowers (about 2–3 oz)

  2. Step 2: Let the infusion cool briefly until safe to handle, then strain the liquid into a large heat-safe container and discard the flowers. Stir all the sugar (1½ cups) and fresh lime juice (2 tbsp) into the still-warm strained liquid until the sugar dissolves completely.

Uses All the infused liquid strained away from the flowers · 1½ cups sugar · 2 tbsp fresh lime juice

  3. Step 3: Divide the concentrate between clean heat-safe containers if needed so it cools quickly, then cover and refrigerate promptly. The batch is stated to make about 5 cups of concentrate. Use it to flavor drinking water or another recipe to taste; no fixed dilution is required here.
