Step 1: Preheat the oven to 350°F (177°C).
Step 2: Grease a 9-inch (23 cm) square baking pan with separate pan-greasing fat. Beat the 75 g softened batter butter, granulated sugar (½ cup) and chosen extract until creamy. Keep brown sugar and powdered sugar for their separate later uses.
Step 3: Beat in eggs (2 large), one at a time.
Step 4: Blend flour (195 g) and baking powder (2 teaspoons) together.
Step 5: Stir the prepared flour mixture alternately with the batter’s 1/2 cup milk into the prepared egg-butter mixture. Reserve the optional 3–4 tbsp milk for glaze.
Step 6: Spread half of batter in greased pan.
Step 7: Combine all chopped nuts, packed brown sugar (1/4 cup) and ground cinnamon (1 teaspoon) thoroughly. Sprinkle half of this prepared nut mixture over the first batter layer; reserve the other half.
Step 8: Carefully spread the remaining half of the batter over the first nut layer, using a water-dipped spoon if helpful. Sprinkle with the remaining half of the prepared nut mixture.
Step 9: Bake 30 to 35 minutes until wooden pick inserted in center comes out clean.
Step 10: Cool in pan on wire rack.
Step 11: If using the optional glaze, mix the powdered sugar (¾ cup) with 3–4 tbsp glaze milk until drizzleable, then drizzle over the cooled cake. Cut into 9–12 slices.
