Step 1: Mince or press the garlic and mince the three chipotles, removing their seeds if desired. Mix all the ketchup (1 cup), honey (⅔ cup), measured adobo sauce, chipotles, garlic, olive oil (2 tbsp), Dijon mustard (¼ cup), cider vinegar, Worcestershire, Maggi sauce, pepper and oregano in a bowl. Add extra chipotle only if you want more heat.
Step 2: Line a large roasting pan with parchment or foil. Spread some sauce on its base, lay in all the ribs and spoon the remaining sauce over them. Seal the pan with foil and refrigerate for 30 minutes to 24 hours; keep the meat cold throughout the marinade.
Step 3: Preheat the oven to 350°F (180°C). Put the sealed pan of ribs in the oven and roast for about 90 minutes, until the meat is tender and has reached at least 63°C (145°F); continue covered if it needs more time. Carefully remove the foil, opening it away from you to release the steam. Spoon the hot sauce from the pan over the ribs.
Step 4: Return the ribs to the same 350°F (180°C) oven uncovered for 20–30 minutes, checking from 20 minutes, until browned and sticky. The ribs should remain tender and fully cooked; watch the sweet coating so it does not burn.
Step 5: Remove the ribs from the oven and rest for at least 3 minutes after cooking. Slice into 2- or 3-bone pieces, pile on a platter and serve four portions. Cool and refrigerate leftovers promptly.
