Method6 steps · about 30 min
Step 1: Heat the oven to 200 °C /180 °C fan /gas 6. Put all the dry rice noodles (100 g) in a bowl and pour over enough of the boiling water to just cover them.
Step 2: Leave the noodles in the hot water for two minutes until bendable but not too soft, then drain well and discard the softening water. Return these drained noodles to the bowl with all the sliced spring onions (3), petits pois, salt and pepper to taste and one third of the prepared chilli, coriander and lime butter. Reserve the remaining two thirds of that same measured 85 g butter for the fish.
Step 3: Mix the drained noodles, spring onions, peas and one-third flavoured butter until that butter has melted through the warm noodles.
Step 4: Divide all the mixed noodles and vegetables between two large squares of baking parchment. Sit one raw 150 g salmon fillet on each noodle bed. Slice the reserved two thirds of the same prepared flavoured butter and divide those slices over the two fillets.
Step 5: Bring the parchment edges together over each fillet and fold to seal, then tuck the ends underneath so there are no gaps. Put both sealed parcels on a baking sheet and bake for fifteen to twenty minutes, until the salmon is cooked through to 63 °C /145 °F in its thickest part. Open carefully to check, avoiding escaping steam; continue baking if needed.
Step 6: Transfer the two baked salmon-noodle parcels to dinner plates and serve straight away. Open the parchment carefully away from your face because steam can escape.
