Step 1: Whisk only the quarter cup kadhi besan with half your chosen yogurt, then the rest until lump-free. Use one cup homemade sour yogurt with three cups kadhi water or the separate three-quarter cup store-bought plain yogurt with 3¼ cups water. Do not combine yogurt routes or use the pakora flour/water.
Step 2: Pour ghee/oil (1½ tbsp) to a large deep pot and heat it. Add cumin, methi seeds & dried red chilli.
Step 6: Mix well and bring to a gentle boil on a low heat. As the mixture begins to heat, keep stirring so the besan does not settle at the bottom.
Step 7: Once the mixture is hot and turns slightly thicker, increase the heat slightly and bring to a boil.
Step 8: Regulate the heat to medium and simmer until the kadhi becomes thick and you see spiced oil floating over it. It takes about 30 mins. Keep stirring the kadhi in intervals of 5 to 8 mins throughout the process.
Step 9: After the sauce is fully simmered, add its ¾–1 tsp salt and taste. Leave it thick but with enough moisture for pakoras. Adjust only with separate extra kadhi salt or boiling hot water as needed; do not use pakora salt or water.
Step 10: While the kadhi cooks, you can begin to make the pakoras. Heat oil for frying in a deep pan/pot.
Step 11: Mix only the separate pakora ingredients: 80 g besan, 85 g sliced onion, optional cornstarch (¾ tbsp), ajwain (0.5 tsp), pakora chilies/ginger (0.5 tbsp)/salt (0.25 tsp)/powders, soda and EITHER its two tablespoons coriander or half cup spinach. Keep kadhi and tadka supplies separate.
Step 12: Mix into a thick sticky batter, starting with three tablespoons pakora water. Add only the remaining tablespoon from its 3–4 tbsp supply if needed; squeeze the onions to release moisture and avoid letting the batter sit long.
Step 13: For seasoning, fry a small batter sample in the heated oil until cooked through, cool and taste it. Adjust the remaining batter with only separate extra pakora salt or spice as needed. Do not taste uncooked gram-flour batter.
Step 14: If the oil still needs checking, drop only a tiny batter portion into it. It should sizzle and rise without quickly browning; adjust heat before frying.
Step 15: Over medium heat, drop portions of the remaining batter into the same hot oil. Leave each frying batch undisturbed 1–2 minutes, keeping space between fritters.
Step 16: Later stir and fry them on a medium heat until crisp and golden. When they are done, the bubbles will reduce. At this stage, reduce the heat and fry them for a minute or 2 to make them crisp.
Step 17: Drain the cooked crisp fritters on a cooling rack or steel colander. Repeat with the remaining batter in the same frying oil.
Step 18: Optional: after all fritters are cooked, refry them in the same oil for one minute over medium heat for extra crispness. Skip this step if choosing once-fried pakoras.
Step 19: Just before serving, stir only the separate 1½ tbsp kadhi coriander garnish into the cooked hot sauce.
Step 20: Use only your chosen once-fried or refried pakoras. Add to hot kadhi for softer fritters, or add at serving for more crispness; do not add both copies of the same fritters.
Step 21: Heat only the separate 1½ tbsp final ghee/oil in a small tadka pan. Add final-tadka cumin and two dried chilies; when sizzling, fry the chopped curry leaves (1 sprig) until crisp. The initial kadhi tempering stocks are already used.
Step 22: Turn off and stir in only the final quarter teaspoon chili powder and quarter teaspoon hing; do not add the initial kadhi chili powder again.
Step 23: Pour this over the kadhi pakora and serve with rice/chawal or with naan.
