Step 1: Mince the garlic, cut the tomatoes into bite-sized pieces, chop the scallion (1) and keep its white and green portions separate. Beat the egg in a small bowl. Boil the noodles according to their package directions until tender, drain and transfer to a large soup bowl. Toss with a few drops of oil to prevent sticking; discard the noodle-cooking water.
Step 2: While the noodles cook, heat the 2 tbsp vegetable oil in a wok or pot over medium heat. Add the minced garlic (1 clove) and the chopped scallion whites prepared in step 1. Stir-fry for 30 seconds, then proceed to the tomatoes.
Step 4: Add 2½ cups ready chicken stock, 1 tsp soy sauce, ⅛ tsp white pepper, ½ tsp sesame oil and salt to taste to the softened tomatoes from step 3. Bring to a simmer, cover and simmer for 3 minutes over medium heat.
Step 5: Uncover the soup from step 4 and increase the heat slightly so it bubbles. Slowly pour in the beaten egg (1) while stirring gently, and cook until the egg ribbons are set. Turn off the heat and pour all the soup over the cooked noodles from step 1. Finish with the reserved scallion greens and optional cilantro; serve hot.
