Step 2: Heat the 28 g butter and 28 g avocado oil in a large skillet over medium heat. Sauté the cutlets for about 5 minutes per side, adding the 165 g pineapple shortly after turning the chicken and cooking until the fruit caramelizes. Adjust the heat if the butter starts to scorch. Check the thickest part of the cutlets with a thermometer and continue as needed until the chicken reaches 165°F / 74°C.
Step 3: Remove the cooked chicken and caramelized pineapple from the skillet and keep warm while making the sauce. Leave the cooking juices and fond in the skillet.
Step 4: Add the minced garlic (1 clove) clove to the same skillet and sauté for about 1 minute until fragrant. Add the 100 ml heavy cream and 90 g white American cheese, stirring until the cheese melts. Stir in the 2 tbsp sour cream, the 4 sliced ham slices and most of the caramelized pineapple, reserving a few pineapple chunks for garnish. Heat through gently.
Step 5: Divide the warm chicken between 2 plates. Spoon the prepared ham-pineapple cheese sauce over the cutlets and garnish with the reserved pineapple chunks.
Step 6: Serve with optional ready cooked rice and steamed broccoli.
