Step 1: Mix the 12 oz sliced chicken with the separate ¼ tsp marinade salt, 1 tbsp Shaoxing wine and 1 tbsp cornstarch until evenly coated. Refrigerate while preparing the vegetables and sauce.
Step 2: Heat the 2 tbsp peanut oil in a large skillet over medium-high heat. Add the chopped ½ large white onion and stir-fry for about 1 minute.
Step 4: Pour the 1 cup chicken broth into all the spiced vegetables from step 3. Add the 2 tsp sugar, separate 1 tsp sauce salt and 2 tsp oyster sauce. Stir together and bring to a boil.
Step 5: Reduce to medium-low heat to maintain a low simmer. Add all the marinated chicken from step 1 to all the curry broth and vegetables from step 4 with as little overlap as possible. Separate any stuck-together slices with a spatula. Simmer for about 2 minutes, continuing as needed until the actual chicken centers reach 74°C/165°F and the sauce is slightly thickened. The sauce thickens a little further as it cools; avoid reducing it unnecessarily once the chicken is fully cooked.
Step 6: Transfer all the fully cooked curry chicken from step 5 to a clean serving plate and serve hot as a main dish, with ready cooked rice if desired.
