  1. Step 1: Remove the outer skins from enough guinep to measure 4 cups peeled fruit, with the seeds still inside. Put the complete measured fruit in a heatproof kitchen container.

Uses 4 cups guinep fruit after removing outer skins; seeds still inside

  2. Step 2: Add all 1 tablespoon freshly grated ginger to the same container of peeled fruit.

Uses Complete four-cup peeled guinep fruit batch with seeds 路 1 tablespoon freshly grated ginger

  3. Step 3: Pour only enough boiling water from the 6-cup available stock over the fruit and ginger to cover the fruit. Cover the container and leave until completely cool and safe to handle. Do not start extracting while the liquid is hot.

Uses Complete peeled guinep fruit and grated ginger in the container 路 Boiling water from the six-cup available stock, only enough to cover fruit; actual draw unspecified

  4. Step 4: Once the infusion is cool, use clean hands to rub and squeeze the guinep fruit and seeds together in that same liquid, releasing the pulp into the water and separating it from the seeds.

Uses Complete cooled guinep-and-ginger infusion with fruit and seeds

  5. Step 5: Strain the complete extracted guinep mixture into a clean container, leaving the seeds and coarse pulp behind. Stir brown sugar into the strained drink gradually to taste until dissolved. Cover and refrigerate until cold. Stir before serving 4 drink portions; final glass volume depends on the water used and extraction yield.
