Step 1: Wash the zucchini (1 lb). Peel off alternating long strips of skin, leaving strips of peel between them. Halve lengthwise, remove the seedy cores, cut each half into wedges and dice them. Finely chop the combined 2 oz cilantro and parsley and have all the pan ingredients ready before heating.
Step 2: If using the two optional tomatoes, peel them, discard the seeds and finely chop them.
Step 3: Peel the two garlic cloves. Grate or press one clove and reserve the other whole.
Step 4: Season all the diced zucchini prepared in step 1 with the 1 tsp salt. Put it in the steamer with the whole garlic clove from step 3. Bring the steamer water to a boil, maintain steady steam and cook until the zucchini is nearly cooked.
Step 5: While the zucchini steams, heat the 3 tbsp olive oil in a skillet. Sauté all the chopped cilantro and parsley from step 1, the grated garlic clove from step 3, optional chopped tomatoes from step 2, ½ tsp ground cumin, 1 tbsp sweet paprika and optional ½ tsp cayenne. If the mixture becomes too dry, add the optional 2 tbsp pan water.
Step 6: Lift the nearly cooked zucchini and whole garlic from step 4 out of the steamer. Crush that cooked garlic clove, then fold it and all the zucchini into the herb-and-oil mixture from step 5. Cook, stirring frequently, for about 1 minute, continuing until the zucchini is fully cooked and coated with the seasoning.
Step 7: Divide the cooked courgette salad from step 6 into four side portions and serve warm. If desired, mix in an extra spoonful of ready chermoula before serving. For a cold salad, cool and refrigerate promptly, then serve cold.
