Step 1: Drain the one firm-tofu block, then gently crumble it into small pieces. Keep this one drained, crumbled tofu batch ready for the later pan stage.
Step 2: Heat a pan over medium-high heat. Add the 1 lb ground pork and break it apart as it browns for 2–3 minutes. This is the initial browning stage; the pork continues cooking after the tofu is added.
Step 3: Add the one prepared drained, crumbled tofu batch to the partly browned pork. Stir and cook the pork-and-tofu mixture for another 2 minutes.
Step 4: Add the 1 tbsp oyster sauce, 1 tbsp soy sauce and 2 tsp sesame oil to the pan mixture. Stir-fry for 1 more minute, until evenly combined and hot. Check that the ground pork is fully cooked at 160°F (71°C); continue cooking if needed rather than relying on the short guide alone.
Step 5: Transfer the fully cooked pork-and-tofu mixture to a shallow serving bowl. Top with the finely chopped half-bunch of cilantro (½ bunch) and serve hot as four portions, with cooked rice if desired.
Step 6: Refrigerate any actual leftovers promptly in a sealed container and use within 2–3 days. Microwave the selected leftover portion in 30-second increments, stirring as needed, until hot throughout at 165°F (74°C).
