Method7 steps

  1. Step 1: Keep unworked wrappers from the one package covered with a clean damp kitchen towel or paper towel. On a clean cutting board, make a stack of 8–10 wrappers, brushing each layer lightly with vegetable oil before adding the next. Leave the very top unbrushed so the layers can be pressed and rolled.

Uses 8–10 dumpling wrappers for this stack · vegetable oil for brushing, as needed · clean water for dampening kitchen towels, as needed

  2. Step 2: Gently flatten the assembled stack from step 1 evenly with your palm or the side of the rolling pin. Turn it over and repeat on the other face, keeping the layers aligned.

  3. Step 3: Once the pressed stack from step 2 is about 50% wider than it started, roll it out. Turn it a quarter turn now and then to keep it round, and continue until it is about 7 inches across.

  4. Step 4: Repeat steps 1–3 to make additional stacks from the remaining wrappers as needed. Prepare one or two rolled stacks for each steaming batch; if placing two together, brush a thin layer of oil between them. Use a multi-level steamer if it fits them, or work in separate batches. Wrap any unused unworked wrappers tightly and place in an airtight freezer bag for later use.

Uses Rolled wrapper stacks for the next batch · Remaining unworked wrappers as needed · A thin brushing of oil between two stacks, if needed

  5. Step 5: Set up the steamer with water below a heat-proof plate holding the selected one or two rolled stacks from step 4. Bring the water to a boil, cover and steam each batch for about 10 minutes, starting once steady steam is established. Repeat for any further batches, replenishing the steamer water safely if needed.

  6. Step 6: Lift the steamed stacks from step 5 onto a clean plate. When they are cool enough to touch safely, peel the layers apart into individual plain pancakes. Each wrapper used becomes one pancake. Fold them if desired and keep covered with a clean warm, damp kitchen towel before and during serving to prevent drying. Serve with your chosen separately prepared fillings.

  7. Step 7: If reheating is needed, arrange a portion of the separated pancakes from step 6, folded, on a heat-proof plate. Re-steam over boiling water for a few minutes until warm, then keep covered until serving.

Uses A portion of the separated plain pancakes for reheating · External steamer water for optional reheating, as needed
