  1. Step 1: Put all the packed cilantro (2) leaves and tender stems, Greek yogurt (1 cup), olive oil (6 tablespoons), measured lime juice (1/4 cup), honey (2 tablespoons), garlic cloves (2) and 3/4 teaspoon blending salt in a blender or food processor. Remove long or coarse excess cilantro stems; individual leaf-plucking is unnecessary.

Uses 2 packed cups cilantro leaves and tender stems · 1 cup plain Greek yogurt · 6 tablespoons olive oil · 1/4 cup lime juice (about the juice of 2 limes) · 2 tablespoons honey · 2 garlic cloves · 3/4 teaspoon kosher salt for blending

  2. Step 2: Blend the loaded ingredients for about 30 seconds, until completely smooth. The dressing should be pourable.

Uses Cilantro, yogurt, oil, lime, honey, garlic and salt ready for blending

  3. Step 3: Taste the smooth dressing and add the separate additional kosher salt only if needed.

  4. Step 4: Transfer the seasoned dressing to a jar and cover. For fuller flavour, refrigerate it for at least 1 hour, preferably overnight. You may serve it immediately if time is short; the chill is optional.

  5. Step 5: Drizzle the finished dressing onto an already-prepared salad, tacos, rice bowl or grilled food as desired. The batch gives about 7 quarter-cup dressing portions.
