Method5 steps · about 12 hr 25 min
Step 1: Core and roughly chop the apple or pear and peel and roughly chop the onion (1). Blend both with ¾ cup soy sauce, 6 tbsp brown sugar, ¼ cup mirin, 2 tbsp minced garlic, 2 tsp minced ginger and ¼ tsp ground black pepper until smooth.
Step 2: Use a rack of beef back ribs (2 kg) with the tough underside membrane removed. Pour all of the blended marinade over the ribs and coat every side evenly. Cover and refrigerate for at least 4 hours; 24 hours is preferred for fuller flavor.
Step 3: Preheat the oven to 100°C (212°F) for 20 minutes.
Step 4: Line a roasting pan or baking sheet with baking paper or foil. Transfer the marinated rack to it and spoon a little of the remaining marinade around the ribs; discard the rest. Bake in the preheated 100°C (212°F) oven for about 8 hours, until the meat is very tender.
Step 5: Remove the tender ribs from the oven, carve between the bones into serving pieces and serve hot.
