Method9 steps
Step 1: Melt 60 g butter in a small pot over low-to-medium heat. Add the optional 2 minced garlic cloves; omit them for the classic plain version.
Step 2: If using garlic, cook for about 5 minutes until just starting to turn golden, avoiding burning it. Otherwise proceed with the melted butter.
Step 3: Add 250 ml milk and bring to a boil. Gradually stir in 80 g semolina, stirring constantly, and cook until the dough pulls away from the sides of the pot.
Step 4: Spread the cooked dough in a shallow bowl and cool completely; use the refrigerator to speed this as the source suggests.
Step 5: Mix the egg (1), one pinch salt and one pinch nutmeg into the completely cooled semolina dough.
Step 6: Bring the chosen 1 litre chicken broth OR vegetable broth to a simmer in a medium pot. Lower the heat to keep it hot just below a boil, so the dumplings will not break apart.
Step 7: Use two small spoons to shape the prepared mixture into dumplings and gently slide them into the hot broth. Dip the spoons in separate hot water between dumplings.
Step 8: Maintain the broth hot just below a boil and steep the dumplings for about 10 minutes until fluffy and cooked through. If using optional carrots, slice them thinly; add them and optional peas during steeping and continue gently until both vegetables and dumplings are cooked.
Step 9: Garnish the hot cooked soup with fresh parsley and serve immediately.
