Method6 steps · about 45 min
Step 1: Before heating the pan, finely dice the large onion (1), mince the two garlic cloves and cut the large russet potato (1) into ½-inch dice. Measure the remaining ingredients. Have purchased or separately prepared beef broth cool enough to mix with cornstarch, and arrange ready cooked rice for serving.
Step 5: Whisk all 1½ cups cool ready beef broth with all 1 tbsp cornstarch in a bowl until smooth. Stir it into the beef mixture from step 4 and bring to a boil. Reduce to a simmer and stir for a few minutes until thickened, with no separate liquid pooling around the curry beef.
Step 6: Add all 1 cup peas if using, then cover the thickened curry from step 5 and simmer gently for about 10–15 minutes, checking from 10 minutes. Continue until the potato pieces are fork-tender and the ground beef reaches at least 71°C. Taste and add a little extra salt only if needed, then spoon over ready cooked rice.
